Single Tier Extended Height & Double Barrel Cakes
Extended height and double barrel cakes are taller than regular cakes. An extended height cake is made up of 6 layers of cake, standing at roughly 8 inches tall, while a double barrel cake is made up of 8 layers of cake, standing at roughly 10 inches tall. They may contain dowels for support, and a cake board
between the top 3 or 4 layers and the bottom 3 or 4 layers of cake for ease of serving. An extended height cake and a double barrel cake will yield the same amount of servings, but the serving size of an extended height slice of cake is shorter than a double barrel slice of cake.
